You won't find any coffee farms in the city itself, but there are plenty in the high mountains surrouding it—this is where local farmers, mostly smallholders with around 1 to 4 hectares of land each, work their coffee-growing magic.The coffee beans in this blend have undergone a lengthy process before reaching the connoisseurs of the coffee world. Once ripe, the cherries were harvested, then depulped either manually or using special pulpers. After fermenting overnight, the depulped seeds were washed and left to dry out in the sun. Due to the shaded terrain of the Huehuetenangan mountains, coffee farmers have to make do with every little bit of a flat surface that's available to them, which is why the beans are often placed on rooftops and patios.
