Chinese Artichoke ‘Conito’ – Unusual tubers that are prolific and simple to grow, with low maintenance required. You can enjoy 20-30 tubers which have a lovely nutty flavour and crispy texture, which will be a fantastic addition to stir fries and salads. Height: 45cm (18”). Spread: 30cm (12”).. Jerusalem Artichoke ‘Papas’ – Reddish-purple skinned tubers with a knobbly texture. These produce high yields, and some can be left in the ground for the following year to harvest. Very versatile when cooked, they can be roasted, baked or sautéed. Height: 3m (10'). Spread: 90cm (36").. Oca ‘Giggles’ – Also known as ‘Peruvian Wood Sorrel’, the tubers are starchy and can be prepared just like potatoes for any dish. The leaves are also edible too and can be used in salads. The tubers have a distinct sweet and nutty flavour. Height and Spread: 50cm (20”).. Yacon ‘Inca Red’ – Widely grown in South America, these tubers have a crunchy texture and boast a sweet flavour comparable to pears. These tubers look like sweet potatoes but with the texture of water chestnuts, and can be added to salads and stir fries, or roasted with other root vegetables.
